VARIETY: Barbera

VINEYARD: Estate vineyards in Agliano Terme, with excellent exposure. Clay soil rich in calcareous marl. The hand harvest is in mid-October.
Grapes from Certified Sustainable Agriculture.

VINIFICATION AND AGEING: After a careful hand selection in the vineyards, the bunches are immediately de-stemmed and crushed. The must starts its fermentation in stainless steel vats at a controlled temperature. The skin-contact lasts for over two weeks. Malolactic fermentation is in winter, where wine aged for over a year. It is bottled unfiltered and remains in our cellars until it reaches a perfect refining.

DESCRIPTION AND TASTING NOTES
Ajan expresses the interpretation we offer of an area of origin famous for the quality of its Barbera. It is a wine with a body and structure that expresses its characteristics already a year after the harvest, but which optimally adapts itself to being aged, evolving and acquiring character with the passage of time.

Colour: intense ruby red;
Bouquet: generous and spicy with traditional notes of mature underbrush fruits in evidence;
Taste: warm and full bodied with ripe cherry scents and elegantly balances tannins.

GASTRONOMIC PAIRINGS
This typical red wine of the Piedmontese tradition, it can be well paired all along the meal, but it intensifies its characteristcs with tasty appetizers and main courses. Perfect with pasta or risotto, and also pizza. Also available with screw cap.
