VARIETY: Chardonnay

VINEYARD: The favourable position, ideal exposure and the good aeration of the bunches are the main characteristics of this vineyard – characteristics that favour perfect ripening of high quality grapes. Calcareous marl soil traditionally vocated for white wines which gives it its structure and aromas. The hand-picked harvest begins in the first weeks of September. Grapes from Certified Sustainable Agriculture.

VINIFICATION AND AGEING: The grapes are carefully harvested, carried in our cellars in small baskets, destemmed and immediately pressed with care. The must obtained is fermented at a controlled temperature of 14/16°C in order to accentuate and enhance the perfumes and scents typical of this vine. A part of the must finishes its fermentation in small oak barrels. The remaining part is left on its lees in stainless steel tanks. It will then be assembled and left to rest in the bottle for a few months.
