Following careful selection in the vineyards, the best grapes are placed into small crates and carefully de-stemmed. Fermentation is carried out in stainless steel tanks at a controlled temperature of 28 ° - 30 ° C and proceeds for a few weeks. After malolactic fermentation and a short stay in stainless steel tanks, in the early months of the year following the harvest, the wine is aged in large oak barrels of 700 and 2000 liters, where it ages for 12 -14 months. The evolution continues in lying-down bottles, in a dark environment and at a constant temperature until it is perfectly aged.
