Nebbiolo
Vineyard
The vineyards are located at a hilly altitude with excellent exposure. The soil is composed of blue marl and clay with a slight presence of sand.
The manual harvest usually takes place between the end of September and the beginning of October.
Vinification and ageing
The maceration is carried out in stainless steel tanks at a controlled temperature of 25-26°C and continues for about 30 days with daily pumping over of the must. The wine begins its aging in wood for at least 12 months. After bottling, it is kept at a constant temperature in our cellars, in a horizontal position, until it reaches perfect refinement.
Description and tasting notes
Pleasant even when young, it also lends itself to good aging, acquiring complexity and refining over time.
Color: garnet red;
Nose: delicate floral aromas, reminiscent of rose and violet, merge with notes of cherry;
Taste: the excellent balance between acidity and tannins gives it an excellent body.
Food pairings
The great structure and good acidity make it a wine that goes well with structured and complex dishes of red meat, game, braised meats and mature cheeses.
