Well-exposed soils consisting of calcareous marl of marine sedimentary origin. The manual harvest takes place between the end of August and the beginning of September depending on the year.
Vinification and ageing
The manual harvest takes place several days earlier than the traditional harvest period to maintain a good level of acidity in the grapes. Fermentation is in stainless steel tanks at a controlled temperature to preserve the primary aromas of the grapes and obtain a wine rich in acidity and aromas. The second fermentation is according to the Martinotti method.
Description and tasting notes
Colour: golden straw yellow with greenish reflections;
Bouquet: fresh and intense hints of apple that blend with notes of bread crust and yeast on a fine perlage;
Taste: dry and delicate with mineral notes that enhance its freshness.
Food pairings
Excellent as an aperitif, with cold cuts or paired with fried fish. It also pairs perfectly with white meats, with a delicate flavour.
