Gamba di Pernice
Gamba di Pernice. Rediscovered heritage of one of the oldest Piedmontese grape varieties; it owes its name to the particular red color of the peduncle of the bunch.
“Tre Termini”, has 4500 plants per hectare. Exposure: to the South West. Soil: calcareous marl. Harvested in the first weeks of October.

The historic grapes of this old grape variety require great respect, with a very delicate de-stemming, in order to keep the highest possible quantity of grapes intact. At a temperature of 29 – 30 ° C the must completes its alcoholic fermentation on the skins for about 20 days.
This is how an elegant, long-lived wine of great complexity is born, which needs to be refined in the bottle for at least a year.
Color : Bright ruby red with purple reflections.
Bouquet : Typical and persistent with a broad bouquet of underbrush, spicy scents and a finish characterized by balsamic notes.
Taste : Dry, warm, harmonious, tasty with a spicy green pepper note.
It doesn’t fear aging, on the contrary, it matures and is exalted over time.
It is a wine that is appreciated for itself. Its typical structured note makes it an excellent accompaniment for rich first courses, meat courses and salads. Perfect when paired with the typical Piedmontese starters.
