The best bunches, produced from old strains, are picked by hand and placed in small boxes. Careful de-stemming is followed by the maceration phase where there is contact with the skins in stainless steel tanks, at a controlled temperature, for a period ranging from 3 to 4 weeks. After the alcoholic fermentation, the malolactic fermentation follows with a short refinement time in stainless steel tanks. In the first months of the following year the harvest, refinement begins in small oak barrels that lasts for over a year. Before it is ready, the bottles remains in the cellar for a few months in a lying down position to continue its evolution.
Color: Intense ruby red with garnet reflections
Bouquet: Rich, intense notes of red berries full and persistent with spicy scents.
Taste: Soft and warm, with character. Highlights notes of licorice and morello cherry with a rich and enveloping finish.
This wine, given its structure, maintains and enhances its characteristics for many years, refining over time.
It goes very well with the great dishes of the Piedmontese tradition. Excellent with first courses and meat dishes.
